I took the orange peels, layered them out in a glass baking dish, and baked them in a 170 degree oven until they started to feel a bit crispy/dried out (I checked them every ten minutes or so).
Once I took them out of the oven, I tossed them into my Ninja and, using the pulse setting, processed the peels in batches until they resembled coarse crumbs.

And voila!

Place in batches in freezer bags and freeze until needed!
I can't even begin to tell you how awesome my house smells right now, and I am anxious to make another batch as soon as I finish the rest of those cute little mandarins. I love using orange peel in glazes and Asian dishes, and I'll post recipes when I use them for the first time.
